Lentils are indispensable in any kitchen, but even more so in plant based kitchen. They are one of the best sources of protein, one of the most satiable grains, and on top of that, they are very affordable. A big tip to make your pantry even cheaper is to buy in bulk. You pay a lot less per 100g, there is less plastic used, and sometimes you can get plastic free packaging as well.
Dry lentils are not as difficult or time consuming to cook as for example dry beans are, which makes today’s follow up recipe super quick to put together. It makes around 4 portions, depends on how much you like to eat. I’ve always found the portion count to be very strange in recipes as they’re never accurate. Am I the only one?
INGREDIENTS YOU WILL NEED FOR THIS RECIPE
- 1/4 versatile tomato sauce (see prev post)
- 50g dehydrated soya mince – you can get if from any health shop
- 165g green lentils
- salt to taste (be mindful that the tomato sauce is already salty so don’t add too much)
Soak the lentils and soya mince in cold water for 10min.
Boil the soy mince for 10min, add the lentils and boil together for a further 10 to 15min.
Strain the liquid and add the soy and lentils to the tomato sauce. Bring to boil then remove from heat.
Serve with your favourite pasta and/or cheese! Enjoy!
